One of the things I am definitely very happy that Dave and I registered for on our wedding registry were cookbooks! Cookbooks are one of the things that I have a hard time justifying buying on my own but I absolutely LOVE leafing through them. There is nothing quite like a good cookbook-one with great pictures and good recipes. I will be sharing a few of our wedding cookbook inspired meals every once in a while!
One of my absolute favorites that we got was It's All Good written by Gwyneth Paltrow. I am so excited to try out all of the recipes in this one, but one of my favorite recipes so far is her recipe for green goddess dressing. It is a wonderful blend of lime, jalapeño, and yogurt that went wonderfully with Dave and I's fish tacos.
Mahi-Mahi Jalapeño Fish Tacos:
For our Fish Tacos Dave and I baked the Mahi-Mahi for around 15 minutes and sprinkled it with salt, pepper, cumin, and cayenne pepper as it was cooling. While the fish was in the oven, I mixed up the green goddess dressing. We did make a few alterations to the original recipe... we used honey greek yogurt rather than the Vegenaise or goats milk yogurt and honey. We also added an entire jalapeño, but I just really like my food spicy. We then assembled our tacos with the rest of the ingredients based on our preferences!
It wasn't an incredibly intense or complicated meal, but it sure was delicious and simple! We are all about simple in this house.
Original recipe for the Green Goddess Dressing was intentionally not shared as it was not a recipe created by me! I do highly recommend the book and suggest people buy it for both this recipe and for all of the other gems that it holds.
