"To try one new recipe every week for the year of 2015"
the Baguette BLT (Leah style)
-8-10 slices thick-cut smoked bacon
-2 organic tomatoes
-1 fresh baguette
-2 handfuls of arugula
-(1 TBS olive oil)
Preheat your oven to 425 degrees. Line a baking sheet with foil and arrange your bacon in a single layer across it. Cook until the bacon is crisp, about 12-15 minutes. Flip halfway through. Put your baguette in for 5-10 minutes along with your bacon to warm it up. While your bacon and baguette are cooking, slice up your tomatoes and place them in a bowl with olive oil, salt, and pepper, stir the tomatoes in and set them aside. Nest mix together your Spicy Mayo:
the Spicy Mayo
-1/4th cup Greek Yogurt
-1/4th cup olive oil mayonnaise
-3 tbsp chili pepper paste
Mix together the yogurt, mayonnaise, and chili pepper paste. Season with salt and pepper and set aside. Once your baguettes and bacon are ready, slice open your baguette and lather your Spicy Mayo on each side. Add on 3-4 slices of bacon, 2-3 slices of tomato, and a handful of arugula. Enjoy! (this sandwich goes really well with kettle cooked sea salt and vinegar chips!)

One of my goals for 2015 is to try out one new recipe every week for the entire year! Dave and I received so many cookbooks for our wedding and for Christmas this year that have just been sitting dormant in the cupboard while we snuck off to McDonalds. I am a little ashamed to admit that we eat so much fast food (these are about all we have in Newton... almost), but I have decided to finally change our ways!
One of my favorite cookbooks is The Newlywed Cookbook which was given to us this Christmas by my sweet mother in law. The book is full of really delicious recipes that don't seem incredibly impossible, time and resource wise, to make! I've noticed while thumbing through some of our other cookbooks that the recipes sound really delicious but seem daunting to make or way too fancy for an everyday meal. This book though is absolutely perfect for our home.
I was a little worried that Dave would turn up his nose to a BLT. He is a big time meat eater and I thought that with it having only bacon, might seem a little light on the meat side. But I cooked them up anyways and even added handfuls of arugula to his, and he liked it, aside from its messiness (the dislike of all things messy is something I will never understand...). I was so pleased and loved this sandwich as well!
